Description
These Greek Chicken Meatballs are a flavor-packed, healthy twist on a classic Mediterranean dish! Bursting with fresh herbs, tangy lemon, and savory spices, they’re juicy, tender, and oh-so-delicious. Perfect for weeknight dinners, meal prep, or entertaining, these meatballs are quick to make and even quicker to disappear. Serve them with lemon orzo, tzatziki, or a fresh Greek salad for a complete meal that’ll transport you straight to the Greek Isles. Trust me, you’ll want to make these on repeat!
Ingredients
- 1 lb ground chicken (thighs for juiciness, breasts for leaner meat)
- 1/4 cup breadcrumbs (gluten-free if needed)
- 1 large egg
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh mint, finely chopped
- 1 tbsp fresh oregano (or 1 tsp dried oregano)
- 3 garlic cloves, minced
- 1 tsp onion powder
- 1 tsp paprika
- Zest of 1 lemon
- 1/4 cup crumbled feta cheese (optional but highly recommended)
- Salt and pepper to taste
- 2 tbsp olive oil (for cooking)
Instructions
- Prep the ingredients: Finely chop the herbs, mince the garlic, and zest the lemon.
- Mix the meatball mixture: In a large bowl, combine ground chicken, breadcrumbs, egg, herbs, garlic, onion powder, paprika, lemon zest, feta (if using), salt, and pepper. Mix gently until just combined—don’t overmix!
- Shape the meatballs: Use a cookie scoop or your hands to form the mixture into 1.5-inch meatballs (about 20-24 meatballs).
- Cook the meatballs:
- Oven method: Preheat the oven to 400°F (200°C). Place meatballs on a parchment-lined baking sheet and bake for 18-20 minutes, flipping halfway through.
- Stovetop method: Heat olive oil in a skillet over medium heat. Cook meatballs in batches for 8-10 minutes, turning occasionally, until golden brown and cooked through.
- Serve: Enjoy warm with lemon orzo, tzatziki, or your favorite sides.
Notes
- Make ahead: Prepare the meatball mixture up to 1 day in advance and store it covered in the fridge.
- Freezing: Freeze uncooked meatballs on a baking sheet, then transfer to a freezer bag. Cook directly from frozen, adding a few extra minutes to the cooking time.
- Substitutions: Swap chicken for ground turkey or lamb, or use gluten-free breadcrumbs if needed.
