Ingredients
- 1 lb skinless salmon, cut into chunks
- 1 lb shrimp, peeled and deveined
- 12 oz fettuccine (or your favorite pasta)
- 4 tbsp unsalted butter
- 1 ½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 1 lemon (zest and juice)
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Cook the pasta: Boil a large pot of salted water. Add pasta and cook until al dente. Drain and set aside.
- Prepare the seafood: Season salmon and shrimp with salt and pepper. In a large skillet, heat 2 tbsp butter over medium heat. Cook salmon for 3-4 minutes per side, then remove. Add shrimp and cook for 2-3 minutes until pink. Remove and set aside.
- Make the sauce: In the same skillet, melt remaining butter. Add garlic and cook until fragrant. Pour in heavy cream and bring to a simmer. Stir in Parmesan until melted and smooth.
- Combine everything: Add cooked pasta, salmon, and shrimp to the skillet. Toss to coat in the sauce. Squeeze in lemon juice and sprinkle with lemon zest.
- Serve: Garnish with fresh parsley and extra Parmesan. Enjoy!
Notes
- Substitutions: Use gluten-free pasta or swap heavy cream for half-and-half or coconut milk.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop with a splash of cream or water.
- Cajun twist: Add 1-2 tbsp Cajun seasoning to the seafood before cooking for a spicy kick.
